    Week Two Complete!


    2010 - 01.24

    This diet thing is getting easier every day. While I still crave some of my old favorite foods, I find it easier to keep myself on course. I always have a bag of fruit and nuts in my purse in the event I get hungry. This way I steer clear from cheating.

    I feel leaner around my arms and waist, as well as in my face and its ONLY been TWO weeks! I can’t imagine what I will look like at the end of the challenge, but I am sure as hell excited to see the results.

    2010 - 01.20

    Today was a good day. I don’t know what it is about this week, but I have been BUSY!!! Work has been non stop the past few days and it doesnt look like it will be slowing down. The good thing about this weekend is that I bought so many groceries that I am left with plenty of cooking options.

    I worked out at home today… 25 challenge:

    25 jump rope reps
    25 squats
    25 kettle bell swings
    25 sit ups

    4 rounds for time, then finish with 100 jump rope reps.

    2010 - 01.19

    Dear Henry, Don’t give up!!! Remember that Cracker Barrel is the devil……Keep the course and continue with Paleo! I apologize for not writing lately. I have been consumed by work. I promise you that I have kept the course and have not cheated. Also, this weekend I discovered Whole Foods market! It was like going to the Disneyland of Paleo.

    This week I joined Paleo Plan online. I recommend it to everyone who wants to eat healthy but doesnt have the time to make a weekly list of meals. Here is an example:

    Meal Plan for January 17-23

    Sunday
    Breakfast: Almond Flour Pancakes, make double batch, blueberries
    Lunch: graze leftovers from fridge (did you make extra chicken skewers last week?)
    Snack: graze leftovers from fridge
    Dinner: Patti’s stew

    Monday
    Breakfast: Leftover almond flour pancakes, fruit
    Lunch: leftover stew
    Snack: fruit salad
    Dinner: spiced chicken with peaches and pineapple sauce, over cauliflower rice

    Tuesday
    Breakfast: avocado shrimp omelet
    Lunch: leftover spiced chicken
    Snack: jerky, fruit, nuts
    Dinner: cacao nib pork chops

    Wednesday
    Breakfast: smoothie, ham
    Lunch: leftover pork chops, celery and carrot sticks
    Snack: carrot sticks, nuts
    Dinner: pepper steak

    Thursday
    Breakfast: eggs, spinach, mushroom, red pepper scramble
    Lunch: spicy tuna salad
    Snack: avocado slices, fruit
    Dinner: Paleo spaghetti

    Friday :: FLEX DAY
    Breakfast: roasted pepper and sausage omelet
    Lunch: salsa salad
    Snack: Jerky, fruit, nuts
    Dinner: Salmon with Coconut cream sauce, broccoli

    Saturday
    Breakfast: baked eggs in bacon rings
    Lunch: leftover pepper steak
    Snack: graze leftovers from fridge
    Dinner: Paleo shepherd’s pie

    2010 - 01.17

    We broke the barrier to finally make it to the play-offs only to choke in the first round. WHY???? Short Passes, Bad decisions, Turnovers and Horrible coverage. Oh well, we should be used to it right? Doesn’t this picture just give you deja-vu?

    Time to move on to Basketball….. Go Spurs Go!

    Paleo update coming shortly! I am headed to Whole Food Market with my grocery list from The Paleo Plan website. I am excited =) Today marks the first week of completion.

    Day 6 of 49 of Paleo Challenge


    2010 - 01.16

    I made it to Crossfit bright and early at 9 am today. The workout was killer and I practically forced myself to go… once I got there and say how many people had shown up it proved that getting out of bed that morning was the right thing to do. Now I am going to be completely honest with you… i struggled today. My body ached and I felt weak. I am not sure if its the change in my diet, or the fact that i crawled out of bed with no breakfast and hit up a HARD ASS work out. But you know what??? I still went… and I still completed the task that was given to me.

    I have stuck for Paleo all week and today is day 6! I went to dinner and a movie with the boyfriend last night and I kept it simple and paleo: grilled Mahi Mahi, Steamed Vegetables and a side salad. At the movies, I did not indulge in my usual popcorn, pickle and cheese frenzy which was absolutely difficult for me!!! The guy next to me had lathered butter on his most wonderful smelling popcorn ever, but I stuck to the goal ahead. I sat and enjoyed ‘The Book of Eli’ with Denzel. Man he’s a good actor!

    This morning I went to Alamo Crossfit. We had a warm up of Jumping Jacks, Shuffle Splits, Squats, Planks and stretching exercises. Then we had a 400 meter sprint + 20 burpee challenge so they could pair you up with your Team for the upcoming WOD.

    The WOD: 30 Kettle Bell swings, 30 Slam Balls, 30 squats (w/45lb bar), and 10 burpees- 3 rounds for time for the team. I felt great afterward…. well after I caught my breath that is! I ate a Paleo kit after and indulged in a protein berry shake for breakfast. That was about two hours ago….. and guess what? I’m hungry again =P

    Day 4 of 49- Paleo Kits


    2010 - 01.14

    I am feeling much better this morning than I have the past few days! I went to bed early and slept an extra hour in the morning. Today I am celebrating 8 months with my awesome boyfriend!!! That thought alone makes my day :)

    This is the quote i need to learn and recite every morning when I wake up: “Eat meat and vegetables, nuts and seeds, some fruit, little starch and no sugar.”

    I ate a Paleo Kit for breakfast, which was much more delicious than I was anticipating! I think I am going to buy a whole bunch of these and keep one in my purse at all times to suppress cravings! After breakfast (8:00 am) I snacked on an apple (10:00) and pretty much focused my energy on work!! Right now I am working on End of Year reviews for my team so I may not be as descriptive on today’s post as usual…. I promise to follow up with more info later =)

    For lunch(12noon) I have the following planned: Baked Turkey, Strawberries and Blackberries! Then I snacked on some carrots and another paleo kit (3:00pm).

    Work was non stop today. I was in and out of meetings, I dealt with customer issues and met with some of my team for their reviews. I got off work a little later than I planned and had to rush to the old apt complex to drop off my keys. I was able to go to Crossfit today, YAY!!!!

    We had our usual warm up, then the challenge 45lb bar jump squats- as many as you can do in a minute. Then came the WOD: Pushups- 2 per minute then double the next round. We did this as many rounds as we could- then after you failed a round, you moved to the second part which was 1 pullup and 1 situp per minute the you add a rep to each the next round, you did this as many rounds as you could until you failed the round. All in all I totaled 19 rounds for both workouts. My hands hurt since i forgot my gloved =( Rough hands on a girl are not cute.

    After the workout my coach stated that eating a carbohydrate within 20 minutes of the workout was a good thing. So they had me try a Hammer Bar: Almond Raisin….. AND yes it was a Paleo treat =) Right now my huney is grilling some steaks and i am getting ready for Greys Anatomy and staying inside away from the rain.

    Cookies- day 3 of 49


    2010 - 01.13

    So let my start of by saying, that NO I did not have any cookies today…. I have stuck to my Paleo Challenge today. This morning I had 5 Hard Boiled Eggs for Breakfast and if you are thinking overkill, you are probably right. I probably could have stopped at 3, but the truth is tha it suppressed my hunger for a good 3 1/2 hours which is good. I snacked on berries and for lunch I had Baked Turkey slices, a tomato and carrots.

    All was good in my hood. While work has been stressful the last few days, and the move hasn’t been stress free, my personal life is quite peaceful. So…. I am at work doing what I do best, and I am getting out of a meeting when I walk to my desk see a package, I get excited and think Flowers/ Stuffed animal???? But no, the box was too small for any of those. So I open it and see a letter from a customer thanking me and my team for the outstanding job we do everyday. It was a really heartfelt thank you which made my day!!!! That is…… until I opened the box! Inside it were Milk Chocolate Chunk, Double Fudge, Milk Chocolate Macaroon and White Chunk Macadamia COOKIES!!!!!!! Shoot me please!

    They looks so delicious! I wanted nothing more than to break my challenge and indulge in one of the White Macadamia but I held strong. I ate an avocado and my left over turkey. INNER STRENGTH!!!! I can do this… I can do this…. Anyways, despite that hiccup, I am going to try and make it to Crossfit today and hopefully get some unpacking done. For dinner I plan on having some salmon, not sure on the sides yet but I will figure it out!

    Update: I went to Alamo Crossfit today- Challenge: 40 seconds of Single Jump Rope and 20 seconds of rest 4 rounds= I completed 207 jump ropes in this time.

    WOD: Deadlifts- 1 rep during 30 second time, 30 seconds to rest then repeat 10 times: I maxed at 125 lbs for the 20 reps for a conclusion we did 8 x 50m sprints.
