Ingredients:
1 lb. bag of pinto beans
1 can of Mexican diced tomatoes
1 package of bacon (not the cheap kind) cut in small pieces
1/2 med onion diced
1 tablespoon of “better than bullion” or Knorr
1/2 bush of cilantro diced
1 tbs of minced onion
(optional 2 tbs of diced pickled jalapenos)
Salt to taste
Directions:
Boil soaked beans with salt, garlic and bullion (optional jalapenos).
Once cooked add the following after preparing:
Saute bacon, when close to done, add onions and cook until almost transparent.
Add the cilantro and saute for about 2 minutes.
Add the can of Mexican diced tomatoes and let it simmer for about 2 more minutes.
Optional (add some of the juice of the diced jalapeno here)
Add this to the beans, let it simmer for about 10 minutes and done.
