    Pecan Crusted Chicken

    Steve and I just finished eating lunch and it was delicious!! Pecan Crusted Chicken with Pineapple, 1/2 a sliced plum and a garden salad. It took me less than 5 minutes to prepare and it tasted like a gourmet meal!!! If you want to make this for yourself or impress some friends with your amazing cooking skills, this is the recipe to try!! It is officially one of my new favorite recipes

    - preheat oven at 350
    - Process a cup of pecan halves until they are small enough for baking
    - take Agave Nectar and Spicy Brown mustard and mix in a bowl
    -Make sure and pat down your chicken breasts so there is no excess water.
    - dip the chicken in the honey mustard sauce on both sides
    - then dip the chicken in the processed pecan mix on both sides
    - bake for 45 minutes
    - add a pineapple slice for extra flavor (optional)

    Almond Meal Blueberry Pancakes

    All I wanted were some pancakes this morning. So I figured, why not make the recipe in the paleo cook book I recently bought?! Necessary ingredients:
    1 cup of coconut milk, 3 eggs, 2 cups of almond meal, 1 cup of coconut flakes, 1/2 cup of fresh blueberries, 1 sliced banana, 3 tbl spoon of cinnamon, 1 teaspoon of vanilla extract. Mix and prepare on a skillet just like regular pancakes!

    I Used a little bit of agave nectar Ti sweeten and ate them all! Try it out if u ever have a craving for a sweet breakfast but want to keep it a healthy one.

    2011 - 02.03

    My oh my! This cold front came at the most inopportune time. Just when we thought the winter was behind us, the coldest off all cold fronts stops by for a visit. Its supposed to snow in San Antonio tonight… like actual snow! This type of weather makes me want to curl up on my couch with some hot cocoa and have the fireplace burning. But that’s not possible…. no chocolate in paleo!

    Yesterday we embraced the cold by a challenge that coach Rick posted on the Alamo CF Blog. We ran…. We ran outside… and we ran in 18 degree weather…Yup we sucked it up! I didn’t want to punk out simply because I knew that piece of our WOD coming in to the gym. Little did I know that we were having a 2 parter. Part 1 was Back Squat Max (12 minutes, work in teams) and Part 2 was “Backpack”: 20 DB Thrusters and 200m run outside AMRAP in 12 minutes.

    Part 1: I know my previous PR for Back Squat was 135lbs. Since I’ve been out in a while, I was not trying to beat it. I did however want to match my old record. We started the first 3 reps at 65, the next 3 reps at 85, then the next reps at 105. Once we started our 1 rep max we tried 115, which I accomplished. Erica, Amy and Monica were in my group. We started running out of time for our max rep so we decided to up the weight to our possible 1 max rep. My attempt at 135 was unsuccessful the first time :( And sadly, I ran out of time before I could try again. So I ended with a 115lb max for the day… but I’m pretty darn sure I could’ve met my 135 goal. Woulda, Coulda, Shoulda, yea I know.. I sound like a brat :p

    The second part of the WOD was “Back Pack”, as I mentioned earlier this WOD was for 20 DumbBell Thrusters and a 20 meter run outside. All ! can say, is thank god Frank let me borrow his wife’s gloves….. he saved my little hands from freezing. That run was brutal. I think i struggled more with that than the thrusters. I finished the WOD with 4 rounds completed.
    Part 2:

    The best part of this workout was seeing the Crossfit 101 class coming in. I must clarify and mention that by “best’ I am being incredibly sarcastic…. you know why? I had 4 of my fellow Rackers attending this class and they got to see me snot covered, running out of breath and sweaty HAHA. I will say though, I am SOOOO proud of them for taking the initiative and going to class. I feel in part they motivated me to go that day.

    2010 - 10.20

    I was doing pretty good last week, I kept the diet consistent all throughout the week…. that is …. until the weekend came. Tun Tun Tunnnnnnn

    Day 5 consisted of a protein plate for breakfast, lunch I went to Ghengis Grill and had Turkey with carrots, celery and onions. I added Bean Sprouts insteas of pasta.

    I had a rehearsal dinner to attend that evening for my lovely friends Sarah and Greg. The dinner was held at Fralo’s pizzeria in Boerne, Tx.  I ate some absolutely delicious pizza and fried zucchini which is NOT at all Paleo. Sometimes, when you are hungry you end up justifying the meal by saing… “oh its only one day!” That One day though is the gateway to day 2 and 3, which is exactly what happened to me =(

    Day 6: Breakfast- 2 Ham and egg tacos on corn tortillas, Lunch: Egg salad sandwich, Dinner: Pan-crusted chicken, grilled asparagus and mashed potatoes.

    Day 7: Breakfast- Grilled Chicken with bell peppers and onions and a Tecate michelada, Lunch- Guacamole salad, Beef Fajita meet with lime juice.

    When I came back to work on Monday I was feeling a little down that I had cheated on my Paleo diet. I had a long week ahead of me with work and I knew the time consumption to create my own meals was going to be a challenge.

    Day 8: Breakfast- Coffee and protein plate, Lunch- Turkey, Brisket, and Sausage from Rudy’s, Dinner- White Fish Ceviche, Tilapia with Tomatillo sauce and a guacamole salad from Aldaco’s. I also had a Michelada with dinner. (Note to self…. Quit drinking beer!)

    Day 9: Breakfast- Coffee and protein plate, Lunch- Tuna Salad (tuna, pico de gallo, and an avocado) Dinner: Lemon Pepper Chicken, grilled asparagus and corn.

    When I was driving home from work, i decided that my lack of time was not enough of an excuse to eat badly. So, I went to check out a place that my friend Jenna was talking about during the wedding this past weekend.

    Its called My Fit Foods: Fresh Food, Preservative Free and Never Frozen!!! These meals are prepared for you on the go. You can stock up your weekly meals and not have to worry about portioning them out because they are done for you. I bought 3 breakfasts and 3 lunches so that I could try them out for the rest of the week. So far, I like what I have tasted!

    Day 10: Breakfast- My Fit Foods Good Morning Sunshine (Turkey, Egg Whites and Pico deGallo) Lunch- My Fit Foods  Killuh Green Chicken (Boiled chicken, cubed and then boiled in a tomatillo/cilantro sauce. This dish is served on a bed of quinoa.) Snack: PB  Oatmega3 bar

    Day 10 is looking up for me…. I hope I can finally get my energy back. These My Fit Food meals also have options that are in line with the Paleo Diet. I am going to focus on eating as  healthy as possible without giving myself a million limitations. I need to remain sane!

    Paleo is the way to go!


    2010 - 10.12

    YAY- Momma got paid a few days ago and finally did her grocery shopping like a good girl should. Today I completed day two of my Paleo Diet. My goal is to get back to my post- Paleo weight back in May (118 lbs) as well as get to body fat percentage of 14-15%. If I do this….. hmmm what should I get for myself? This is something I still haven’t figured out. If you have any suggestions please let me know. I am determined to get back to my old motivated self and this is the way to start.

    My diet started yesterday:

    Day 1: Breakfast: Coffee and Protein Plate, Lunch: Turkey and Beef Brisket with a side of corn, Dinner: Catfish, Grilled Bell Peppers, Zuchini and Squash with  a cucumber snack

    Exercise: Went for a walk in the park with my boyfriend and Jacks (my yorkie) for about 25 minutes.

    Day 2: Breakfast: Strawberry, Banana protein shake, Lunch: Catfish, Cauliflower Rice with Mushrooms, Avocado salad, Dinner: Spaghetti Squash (turkey meat, corn, celery, onions, mrs. dash, tomato paste, basil)

    Exercise: None today- total fail. (excuse? I worked late today =(…)

    2010 - 01.19

    Dear Henry, Don’t give up!!! Remember that Cracker Barrel is the devil……Keep the course and continue with Paleo! I apologize for not writing lately. I have been consumed by work. I promise you that I have kept the course and have not cheated. Also, this weekend I discovered Whole Foods market! It was like going to the Disneyland of Paleo.

    This week I joined Paleo Plan online. I recommend it to everyone who wants to eat healthy but doesnt have the time to make a weekly list of meals. Here is an example:

    Meal Plan for January 17-23

    Sunday
    Breakfast: Almond Flour Pancakes, make double batch, blueberries
    Lunch: graze leftovers from fridge (did you make extra chicken skewers last week?)
    Snack: graze leftovers from fridge
    Dinner: Patti’s stew

    Monday
    Breakfast: Leftover almond flour pancakes, fruit
    Lunch: leftover stew
    Snack: fruit salad
    Dinner: spiced chicken with peaches and pineapple sauce, over cauliflower rice

    Tuesday
    Breakfast: avocado shrimp omelet
    Lunch: leftover spiced chicken
    Snack: jerky, fruit, nuts
    Dinner: cacao nib pork chops

    Wednesday
    Breakfast: smoothie, ham
    Lunch: leftover pork chops, celery and carrot sticks
    Snack: carrot sticks, nuts
    Dinner: pepper steak

    Thursday
    Breakfast: eggs, spinach, mushroom, red pepper scramble
    Lunch: spicy tuna salad
    Snack: avocado slices, fruit
    Dinner: Paleo spaghetti

    Friday :: FLEX DAY
    Breakfast: roasted pepper and sausage omelet
    Lunch: salsa salad
    Snack: Jerky, fruit, nuts
    Dinner: Salmon with Coconut cream sauce, broccoli

    Saturday
    Breakfast: baked eggs in bacon rings
    Lunch: leftover pepper steak
    Snack: graze leftovers from fridge
    Dinner: Paleo shepherd’s pie

    2010 - 01.17

    We broke the barrier to finally make it to the play-offs only to choke in the first round. WHY???? Short Passes, Bad decisions, Turnovers and Horrible coverage. Oh well, we should be used to it right? Doesn’t this picture just give you deja-vu?

    Time to move on to Basketball….. Go Spurs Go!

    Paleo update coming shortly! I am headed to Whole Food Market with my grocery list from The Paleo Plan website. I am excited =) Today marks the first week of completion.
